Make Me a Vegan


Breakfast

I’m going fishing today so I had to have a quick little breakfast. I thought that a Kellog’s Nutri-Grain Cereal Bar would be vegan, but after checking their website, there is a warning that states:

CONTAINS WHEAT, MILK AND SOY INGREDIENTS.

Wish me luck on the fishing though. Wait, fishing cannot be vegan. At least, I practice catch and release, meaning after I catch the fish I throw the little guy back. Double fail today and it’s only 8:30 in the morning.




Dinner

For dinner today I had Barilla spaghetti with Classico cabernet marinara sauce with herbs. I made a salad with iceberg lettuce, chopped tomatoes, and garbanzo beans on top. As an after dinner snack, we had cherries.

Barilla Spaghetti
  • Semolina
  • Durum flour
  • Niacin
  • Iron (ferrous sulfate)
  • Thiamine mononitrate
  • Riboflavin
  • Folic acid
  • Contains wheat ingredients. This product is manufactured on equipment that processes products containing eggs.

Classico Cabernet Marinara Sauce with Herbs

  • Tomato puree (water, tomato paste)
  • Diced tomatoes (tomatoes, tomato juice, citric acid, calcium chloride)
  • Cabernet wine (sulfur dioxide added to protect color)
  • Onions
  • Sugar
  • Salt
  • Soybean oil
  • Olive oil
  • Spices
  • Dehydrated garlic
  • Dehydrated onion




Lunch

I fail. Today for lunch I was not a vegan. We ordered 3 pizzas from Pizza Hut. Seriously, how can one beat 3 pizzas for $5 each? Make them yourself, that’s how. Here are the ingredients that go into making a cheese pizza from Pizza Hut.

Pan Dough
  • Enriched bleached wheat flour (bleached flour, malted barley flour, niacin, ferrous sulfate, thiamin mononitrate, riboflavin, folic acid)
  • Water
  • Yeast
  • Salt
  • Sugar
  • Soybean &/or cottonseed oil
  • Whey
  • May contain 2% or less of enzymes &/or datem
  • Vital wheat gluten
  • Potassium sorbate (preservative)
  • Ascorbic acid
  • Sodium stearoyl lactylate
  • Contains wheat and milk.

Pizza Cheese

  • Part skim mozzarella cheese (pasteurized milk, cheese cultures, salt, enzymes), modified food starch, whey protein concentrate, non- fat milk, sodium propionate (added as a preservative).
  • Contains milk.

Pizza Sauce

  • Tomato paste
  • Water
  • Salt
  • Spices
  • Garlic powder
  • Citric acid

Snack

I made myself some Steelcut Oatmeal from Trader Joe’s. The ingredients inside the oatmeal are all vegan, but there is a warning label below the ingredients that says:

Made on shared equipment with soy wheat, milk ingredients & shellfish. Facility processes tree nuts and fish.

Therefore, this might not be vegan to some seasoned, hardcore vegans but for me I’m going to count it as vegan. So far today, I have been 100% vegan.

Ingredients:

  • Water
  • Steelcut oats
  • Brown sugar
  • Maple syrup
  • Rolled oats
  • Salt



Dinner

Grilled Tomato Salsa

  • 2 tablespoons canola oil, plus more for brushing tomatoes
  • 2 serrano chiles
  • 1 small red onion, coarsely chopped
  • 4 cloves garlic, peeled
  • 6 plum tomatoes, halved and seeded
  • Salt and freshly ground black pepper
  • 2 limes, juiced
  • 1/4 cup chopped fresh cilantro leaves
  1. Heat grill to high.
  2. Heat oil in a small saute pan and saute the chiles, onion, and garlic until soft.
  3. Brush tomatoes with oil and season with salt and pepper. Grill on both sides until they are slightly charred and soft.
  4. Transfer tomatoes and serrano mixture to a food processor, add the lime juice and salt and pepper and process until smooth. Add the cilantro and pulse a few times (there should be flecks of cilantro in the salsa). Transfer to a bowl.

  • Enriched wheat flour (bleached wheat flour, niacin, reduced iron, thiamine monoitrate, riboflavin, folic acid)
  • Filtered water
  • Canola oil
  • Salt
